I\u2019m not what most would call a \u201ccook.” However, with this whole pandemic thing going on, we\u2019ve been cooking at home a lot more, and spending more time in the kitchen cooking as a family. We\u2019re trying to use this time to teach our boys how to cook simple meals. You know, meals that aren\u2019t too complicated and include ingredients we usually have in the house. <\/span><\/p>\n

Like most households, we have a lot of favourite meals that we tend to stick to, but every now and then I\u2019ll try a new recipe to see if it\u2019s a hit or miss. If it\u2019s a hit, we add it to our meal rotation. If it\u2019s a miss, at least we tried something new, right? But there are meals that fall in between. They aren\u2019t great\u2026but they have potential. That brings me to my Meatloaf Muffin Recipe!<\/span><\/p>\n

A few years back, we tried a \u2018Meatloaf Muffin\u2019 recipe I found online. Following the recipe exactly, I gotta say\u2026it was definitely a miss. We found it kind of blah. BUT, I really liked the idea of it. Come on, it\u2019s meatloaf\u2026in muffin form! <\/span><\/p>\n

So instead of calling that recipe a complete loss, I made some adjustments, made it my own, and now Meatloaf Muffins have been a staple in our house for YEARS! I\u2019ve actually whipped some up a few times over the last few months to throw in the fridge for quick lunches since we\u2019re all at home most days. <\/span><\/p>\n

They\u2019re delicious, healthy and look A LOT more appetizing than your regular meatloaf. In the colder months, we have them with mashed potatoes and gravy, but at this time of year we serve them up with veggies and a salad. They are definitely a year-round meal! <\/span><\/p>\n

The recipe is below. I hope your family enjoys them as much as we do! And if you have little chefs in your house that you\u2019re trying to keep busy, have them help you measure and add ingredients!<\/span><\/p>\n
