Grown in South America (Peru, Chile and Bolivia) for thousands of years, quinoa formed the staple diet of the Incas and their descendants.<\/p>\n<p> <!--more--><\/p>\n<p><img decoding=\"async\" class=\"alignnone size-full wp-image-15356\" src=\"https:\/\/cdn2.hubspot.net\/hubfs\/3295812\/Imported_Blog_Media\/Quinoa2.jpg\" alt=\"quinoa2\" width=\"3456\" height=\"5184\"><\/p>\n<p>The UN actually named 2013 \u2018International Quinoa Year\u2019 in recognition of the crop\u2019s high nutrient content.&nbsp;According to the <a href=\"https:\/\/www.bbcgoodfood.com\/howto\/guide\/health-benefits-quinoa\">BBC Good Food<\/a> website, quinoa has \u201ctwice the protein content of rice or barley, (and) is also a very good source of calcium, magnesium and manganese\u201d. Quinoa also possesses good levels of several B vitamins, vitamin E and dietary fibre.<\/p>\n<p><img decoding=\"async\" class=\"alignnone size-full wp-image-15358\" src=\"https:\/\/cdn2.hubspot.net\/hubfs\/3295812\/Imported_Blog_Media\/Quinoa3.jpg\" alt=\"quinoa3\" width=\"3456\" height=\"5184\"><\/p>\n<p>My Spinach and Feta Quinoa Cake recipe is relatively easy to assemble and they freeze great! They are basically a quinoa burger and can be eaten on a bun or plain. We enjoy them both warm and cold and my daughters love dipping them in tzatziki. They are the perfect energy-packed snack on the go!<\/p>\n<p><strong>Spinach and Feta Quinoa Cakes Recipe<\/strong><\/p>\n<p>Prep time: 20 minutes<\/p>\n<p>Total time: 40 minutes (makes about 20 patties)<\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<ul>\n<li>3 cups cooked quinoa<\/li>\n<li>1\/4 cup freshly squeezed lemon juice<\/li>\n<li>1 cup reduced fat feta cheese, crumbled<\/li>\n<li>1 cup of pitted black olives, chopped<\/li>\n<li>2 tablespoons fresh or dry dill, finely chopped<\/li>\n<li>A few pinches of sea&nbsp;salt and freshly ground pepper<\/li>\n<li>5 cups&nbsp;of&nbsp;<a href=\"http:\/\/cookingreens.com\/organic-spinach\/\">chopped<\/a> frozen spinach, slightly defrosted<\/li>\n<li>2 garlic cloves, finely chopped<\/li>\n<li>4 large eggs, lightly beaten<\/li>\n<li>3\/4 cup whole wheat bread crumbs<\/li>\n<\/ul>\n<p><img decoding=\"async\" class=\"alignnone size-full wp-image-15352\" src=\"https:\/\/cdn2.hubspot.net\/hubfs\/3295812\/Imported_Blog_Media\/Ingredients.jpg\" alt=\"ingredients\" width=\"3456\" height=\"5184\"><\/p>\n<p><strong>Directions:<\/strong><\/p>\n<ol>\n<li>In a large bowl, add the cooked quinoa, eggs, garlic, dill, lemon, salt\/pepper, feta cheese, bread crumbs, chopped black olives&nbsp;and mix well the chopped spinach<\/li>\n<li>Allow the mixture to stand for a few minutes, enabling the bread crumbs to absorb the lemon and eggs<\/li>\n<li>Heat some olive oil in a large skillet or&nbsp;frying pan<\/li>\n<li>Form&nbsp;quinoa cakes or patties about 2 1\/2 inches in diameter and 1\/2 inch thick. Place the patties in skillet, in batches if necessary<\/li>\n<li>Cook the patties until they\u2019re browned on the outside, 4 to 5 minutes per side and then flip<\/li>\n<li>Serve warm with a squeeze of lemon and dip in tzatziki, a flavoured mayo or plain Greek yogurt.
