It is almost summer holidays! Time for splash pads, parks, cottages, camps and summer hikes! I am always looking for high energy, healthy snacks for the kids to bring on the road and this Easy One Bowl Honey Flax Banana Bread Recipe is just the thing for food on the go.

Before heading to the cottage, I make a loaf of this one bowl banana bread just before we depart so that the kids have something to snack on during the drive. Very often, it is gone before we even arrive!

I don’t consider myself a baker. I tend to excel in the savoury dishes category, but when I do get out the flour and mixing bowls, I like to keep it simple. And while baking isn’t for everyone, this super easy one bowl banana bread is mega easy to make. I have given traditional banana bread a healthier spin with whole wheat flour, flax and replacing part of the sugar with honey.

Make it with the kids – it literally takes 10 minutes to put together!

Easy One Bowl Honey Flax Banana Bread Recipe

Ingredients:

  • 3 large ripe bananas
  • 1/3 cup melted butter
  • ¼ cup brown sugar
  • ¼ cup honey
  • ¼ cup ground/milled flax seed
  • 1 large egg, lightly beaten
  • 1 tsp vanilla extract
  • 1 tsp baking soda
  • 1 ½ cups whole wheat flour
  • OPTIONAL: ¼ cup mini chocolate chips or ¼ chopped walnuts

Directions:

  1. Preheat oven to 350 degrees F. Spray a 8″x5″ (or similar size) loaf pan with non-stick baking spray and set aside
  2. In a large bowl, mash the bananas until somewhat smooth (I like it a little bit chunky!). Stir in the melted butter
  3. Next, add the sugar, egg, vanilla, baking soda and flour and stir until the batter is thick and combined. Fold in the chocolate chips or chopped walnuts or just leave plain!
  4. Pour/scoop the batter into the prepared loaf pan
  5. Bake for 45-50 minutes (depending on oven) and use a baking tester or toothpick to ensure it is fully cooked in the centre of the loaf
  6.  Remove loaf from pan and let it cool completely on a wire rack. Slice and enjoy!

Notes:

  • Not a fan of honey? Substitute maple syrup instead and honour Canada’s 150th birthday!
  • Sprinkle a few more chocolate chips or chopped walnuts on top of the batter before baking for a smashing presentation.
